Shredded Chicken Burritos=YUMMY!

So last night I was deciding what to cook for dinner and grilled chicken and asparagus sounded a little boring so I started pulling stuff out and here is what I came up with....
Ingredients:
3-4 Chicken breast
1 can Rotel
1 can peeled diced tomatoes
1 can whole kernnel unsalted corn
1 can diced green chilies
1 can black beans (drained and rinsed)
Cummin Seed
Minced Onion
Pepper
Garlic Salt
Lime Juice
Small-Medium Onion
Cilantro
3 Garlic Cloves


Bring stockpot of water to boil add "dashes" of the following to season

throw in the chicken (3-4 breasts)
and gather the following ingredients

sprinkle Cummin Seed into the sauce pan and let heat while you quickly chop a small/medium Onion and then saute the Onion with the Cummin Seed

Chop about a quarter to half a bunch of Cilantro, depending on how much you like the flavor

press 3 Garlic Cloves into sauce pan with Onion and Cummin Seed
also, go ahead and cut and shred your chicken

now add Cilantro to the Onion, Garlic & Cummin seed and saute a bit but
don't let it dry out or brown

The smell is already amazing!
Now add the Rotel, can of peeled and diced tomatoes, diced green chilies, a squirt of lime juice and a cup of the broth from the pot you boiled your chicken in.
Let this simmer for a few minutes and then add the corn, black beans and the shredded chicken.
(make sure to rinse and drain the black beans)

Let this cook for about 15-20 minutes on medium heat and serve!


We put it on burrito tortillas and sprinkled on cheese with a dollop of sour cream.
